If it's been sitting for an extended amount of time it often reads higher than normal so if you check it cold and it's low it almost certainly will be low warm. I would also check the transmission fluid level but you need to do this when it's warmed and the vehicle is running in park. Front suspension and steering components would certainly be a plus to check if you are able to do it. I would also check all of the lights/ signals and horn. I would bring an IR pyrometer so if something feels/sounds strange you can at least quickly check temperature to determine where the issue is. Any caliper sitting a long time could become an issue. I would not attempt to use the parking brake until you get to where you are going as it may stick and not release. The rear disc brake design was not the best. If it's been sitting a long time be cautious of the brakes. I would suggest inspecting the tires carefully before you drive it (pressure and look for age related cracking).
